“And believe me, a good piece of chicken can make anybody believe in the existence of God”-Sherman Alexie. Chicken curry is one of the most savored dish amongst the Indians. Chicken cooked with a mixture of exotic spices is bound to be absolute divine, how ever the chicken curry we are talking in this post comes with a twist. This Chicken curry of course comes with it’s share of exotic species but it is cooked in a classic Bengali style with bongs favorite potato.
Lets dive in :
Chicken 400 gm
Onion – 2 medium ( 1 onion sliced, 1 onion paste)
Tomato – 2 medium ( pureed)
Potato – 1 Optional
Garlic – 4-5 cloves
Ginger paste- 1 tea spoon
Cumin Powder – 1 tea spoon
Coriander Powder – 1 tea spoon
Whole garam masala ( Cinnamon , Cloves, Green cardamom) – ½ tea spoon
Kashmiri red chilli powder – ½ tea spoon
Turmeric powder – ½ tea spoon
Oil – 3 table spoon
Salt to taste
Green Chilli – 2 or as you like
Few grains of sugar
Water 1 cup
Clean and marinate chicken for half an hour with salt and turmeric.
Peel and Cut Potato into half . Fry the them in 1 tbsp oil , keep aside.
Now in the same oil , add 1 tbsp more oil and add the marinated chicken and fry in medium flame for 5 minutes . Reduce the flame if necessary. Keep aside.
Add another 1 tbsp oil , add few grains of sugar to caramelize , then the crushed garlic and sliced onions to it. Fry till onions turn golden .
Now add the crushed onion and tomato puree, ginger paste and other spices and cook till it starts to leave oil .
Now add the Chicken and Potato , Cook in medium flame again for 5-7 minutes without cover . Add 1 cup of water , Cover it and let it cook .
Check in between and add water if necessary . Once the chicken and potato are completely cooked balance the taste and adjust the consistency of the gravy , if you want more gravy add little hot water to it .
And Enjoy with crispy paratha/ luchi/ rice/ roti whatever you like . A vinegar dipped onion with it would do wonders . 😀
